This balsamic chicken recipe is baked in the oven in a 9x13 dish with a balsamic, honey, and garlic sauce that thickens as it bakes alongside juicy cherry tomatoes. It's one of the easiest, most flavorful dinners — just 10 minutes of prep, then the oven does the rest. No extra sides needed; the sauce is built right in!
ingredients
4 boneless, skinless chicken breasts (6 oz each) (pounded to even ¾-inch thickness)
¼cup balsamic vinegar
2tbsp honey (or pure maple syrup)
2tbsp olive oil
2tsp Dijon mustard (optional)
4cloves garlic (minced)
1tsp dried basil
1tsp salt
½tsp black pepper
2pints cherry tomatoes (halved)
chopped fresh parsley (for garnish)
Instructions
1
Preheat oven to 425°F (220°C).
2
Pat chicken dry with paper towels. Place each breast between plastic wrap and pound to ¾-inch even thickness using a meat mallet or rolling pin. Arrange in a 9×13-inch oven-safe baking dish.
3
In a small bowl, whisk together balsamic vinegar, honey, olive oil, Dijon mustard (if using), minced garlic, dried basil, salt, and pepper.
4
Pour sauce over chicken and flip each piece to coat evenly. Let marinate for at least 10 minutes at room temperature.
5
Scatter halved cherry tomatoes around and over the chicken.
6
Bake for 20–25 minutes, or until internal temperature of chicken reaches 165°F (75°C). Optional: broil 1 minute for glossy, caramelized finish.
7
Rest chicken for 5 minutes. Garnish with fresh parsley and serve with pan juices and tomatoes.

Note
Tip: For extra juiciness, never skip the 10-minute marination—even a short soak makes a big difference.
Broil for color: A quick 1-minute broil at the end gives a glossy, restaurant-worthy finish.
Meal prep: Leftovers keep well for 2–3 days. Reheat gently in oven or microwave.
Variation: Swap chicken breasts for thighs—just extend bake time by 5–10 minutes.
