These Ground Chicken Burgers are light, juicy, and packed with flavor thanks to fresh herbs, garlic, onion, and a touch of mayo for moisture. Perfect for weeknight dinners or weekend grilling, they’re a healthier alternative to beef burgers without sacrificing taste. Serve them Mediterranean-style with tzatziki or classic with lettuce and tomato!
1tablespoon fresh parsley (chopped; can substitute basil or cilantro)
1 garlic clove (minced)
½teaspoon paprika
½teaspoon salt
¼teaspoon black pepper
1tablespoon avocado oil (for cooking)
Hamburger buns (for serving)
Lettuce, tomato, and red onions (for serving)
Instructions
1
In a medium bowl, add ground chicken, breadcrumbs, mayonnaise, onions, parsley, garlic, paprika, salt, and pepper. Use your hands to combine all the ingredients until just mixed—do not overmix.
2
Form the mixture into 4 patties, about ¾ inch thick. Press down gently in the center of each patty with your thumb to prevent puffing during cooking.
3
Preheat a large non-stick skillet or grill pan over medium heat. Add avocado oil to coat the bottom.
4
Once hot, add the chicken burgers. Cook for 5–6 minutes on the first side until golden brown.
5
Flip and cook for another 5–6 minutes on the second side, or until internal temperature reaches 165°F (74°C).
6
Let rest for 2 minutes, then serve on buns with your favorite toppings.

Note
Don’t overmix: Overworking the meat can make burgers tough—mix just until combined.
Thumb trick: Pressing a small dimple in the center helps burgers cook evenly.
Make it gluten-free: Use gluten-free breadcrumbs or rolled oats.
Meal prep friendly: Patties can be shaped ahead and refrigerated for up to 24 hours before cooking.
